The finished dough is simply wrapped around the stick, baked over an open flame and often even eaten directly from the stick. If you are looking for a recipe for stick bread dough, this is usually the variant with yeast. But what about a recipe without yeast ">

If you want to prepare stick bread yourself, you will need the appropriate dough that can be easily wrapped around the stick. There are many recipes for this unique type of bread, but it is often the case that yeast is typically part of the dough. However, yeast is not an option for everyone, either because of an allergy or because the person feels bloated after eating it. In this case, an alternative baking recipe should be used so that you can enjoy the stick bread dough after baking. For the yeast, other ingredients can be used that are as aromatic and easy to bake.

Why stick bread dough without yeast?

To bake stick bread without yeast seems to be strange for many people, because in this case the bread has more problems in cooking. However, not all yeasts tolerate, even if real yeast allergies only very rarely occur in Central Europe compared to possible discomfort. It often happens that yeasty biscuits are heavy in the stomach or adversely affect digestion. That in such a case a yeast-free alternative is sought, is no wonder. Luckily, you can easily make stick bread without the mushrooms, all other ingredients are needed and the preparation stays exactly the same.

Stick bread dough with baking soda: recipe

As a classic substitute for yeast baking soda is often used, which is also good for the stick bread. An advantage of baking powder is the easy availability and low cost needed for a packet of leavening agent. If you use baking soda instead of yeast, you do not have to worry about the taste, because it stays the same. The only difference is the consistency. The baking powder makes the bread more airy than yeast, but also a little softer. The following ingredients and utensils (for four people) are required for this recipe:

  • 700 g of flour
  • 2 packs of baking soda
  • 1 pinch of salt
  • 1 tablespoon butter
  • 200 ml of milk
  • 2 eggs
  • a big bowl
  • Dough scraper, if you do not want to use your hands for the preparation
  • Disposable gloves

Proceed as follows to prepare the dough:

Step 1: Prepare the ingredients at home. You can easily adjust the amounts to more or less people, depending on how big the group is at the barbecue.

Step 2: Mix all ingredients except the milk in the bowl. It is easier if you chop the butter down first, if you do not have the strength to mix it in the dough.

3rd step: After you have reached a uniform mass of dough, slowly add the milk to the dough. Slowly add the dough to the dough while stirring to keep it supple. Here is also a helping hand good.

Step 4: After all the milk has been added, it is best to knead the dough with your hands. Before doing so, of course, put on the disposable gloves until a smooth mass is obtained. The dough should not run between your fingers and it should be easy to demolish individual pieces. These are the ones that will be wrapped around the stick afterwards.

Step 5: Now you can cover the bowl with a lid or cling film. Thanks to the baking powder, the dough does not have to be left standing since the blowing agent does not have to be activated by heat.

Step 6: Finally, finish your stick and prepare your stick bread.

Tip: Even if baking soda is a possible alternative, you should not use soda. Soda quickly needs a direct and even heat effect, otherwise the dough tastes slightly soapy and in addition the dough does not become airy, which is a characteristic of stick bread.

If you not only want to use pure baking powder, you can also try another recipe. This is especially tasty and uses traditional bakery art. The main ingredients for this variant are quark and oil, which work as an alternative to yeast and give the bread a special character. The taste is slightly different, quite sweet, and makes use of the individual ingredients, which come to the fore in this variant. The following ingredients and utensils are required for this sticky dough (for four people):

  • 600 g of flour
  • 2 sachets of baking soda
  • 1 pinch of salt
  • 1 packet of vanilla sugar
  • 12 tablespoons of tasteless vegetable oil
  • 6 tablespoons of milk
  • 2 eggs
  • 300 g quark; Low-fat cottage cheese is also possible
  • big mixing bowl
  • Dough scraper or hand mixer

As you can see, no butter is used as you use oil. Be sure to use an oil that has little flavor. Olive oil is not really suitable because of the aroma, as milk and quark would bite with the olive flavor. The following vegetable oils are well suited for this recipe:

  • Sunflower oil: but still has quite a taste of its own, but not so striking
  • rapeseed oil
  • peanut oil
  • soybean oil
  • Grapeseed oil: very expensive, therefore usually not recommended for a stick bread dough
  • Corn oil: due to the slightly sweet taste, it is well suited to the bread

As an alternative to vanilla sugar, you can of course use vanilla sugar or even real vanilla extract and some sugar. Just replace the packet of vanilla sugar with 40 to 60 grams of sugar and a few drops of vanilla extract to get a noticeable touch of vanilla. However, if you prefer to avoid the vanilla, you can only add the sugar. However, the vanilla flavor is recommended for this recipe because together with the quark and the milk, it provides a unique flavor that is especially tasty for children. Proceed as follows during preparation:

Step 1: Place the bowl in front of you and make sure it is clean.

2nd step: Now mix together the flour and baking powder in the bowl. To do this, use the dough scraper and make sure that the powder is well distributed, which is easy and fast.

Step 3: Then add the remaining ingredients in succession into the flour-baking powder mixture and knead them at low speed with the hand mixer or the dough scraper. Do not set the level too high, otherwise it will splash.

Step 4: After the ingredients are kneaded to a mass, increase the level and knead the dough until it is supple and lumpy.

Step 5: Be careful not to knead too long, otherwise it will start to stick.

6th step: Now the dough is placed on a surface with flour, formed into a roll and cut off suitable pieces for the bread. It is important to wear gloves during this procedure so that you do not accidentally stick the dough to your fingers. Do not allow too much time and thoroughly sand the surface so that the sticky bread dough does not stick to your fingers.

Step 7: Then you can wrap the individual portions in cling film and transport thanks to this form easily.

Note: If you want to prepare the stick bread after putting the dough together, be sure to pick a stick that is not from poisonous bushes, shrubs or trees and has a solid core. For example, beech, hazel or willow trees are best, as softwoods are more easily flammable and should therefore be used only for campfires.
